Tuna Tomato Melt

This is the perfect, quick recipe for a weekday lunch. You can make the tuna mix in advance and store in the fridge to save even more time.

Method

  1. Preheat the grill to its highest temperature.
  2. Flake the tuna into a medium bowl. Mix in the mayonnaise, celery salt, onion granules, garlic granules and red onion. Stir well.
  3. Place the muffin halves on a grill tray and grill on both sides until lightly browned.
  4. Remove from the grill. Let cool for one minute, then spread each half with a little tomato puree.
  5. Spoon the tuna mixture onto each muffin half and top with a slice of cheese.
  6. Return to the grill and toast for 2-3 minutes until the cheese has melted.

Ingredients

All to be sourced organic where possible

  • 200g can tuna in spring water, drained
  • 3 tbsp mayonnaise (65g)
  • ½ tsp celery salt
  • 1 tsp onion granules
  • 1 tsp garlic granules
  • ½ red onion, finely chopped (90g)
  • 4 English muffins, split in half (300g)
  • 2 tbsp Tarantella Organic Tomato Puree (50g)
  • 8 Cheddar cheese slices (200g)
