Seed and spice granola

Cinnamon and orange give this granola a warming glow. Perfect with milk, yoghurt, fresh fruit or simply on its own.

Method

  1. Preheat the oven to 160c/325f/Gas Mark 3.
  2. In a large bowl, mix together the oats, raisins, pecans, pumpkin seeds and cinnamon. Set aside.
  3. Put the honey and oil into a small pan and heat gently for 30 seconds. Stir in the orange zest and vanilla, then pour over the oat mixture and mix thoroughly.
  4. Divide the mixture between two large baking trays and spread out evenly. Bake for 25 minutes, stirring once in that time.
  5. Leave to cool completely, then store in an airtight container. Enjoy with milk or sprinkled on top of yoghurt or fruit.

  • 450g rolled oats
  • 100g raisins
  • 75g pecans, roughly chopped
  • 75g pumpkin seeds
  • 1 tbsp ground cinnamon
  • 125g honey
  • 50ml vegetable oil
  • 1 orange, zest only
  • 1 tbsp vanilla extract
