Carrot cake overnight oats

These overnight oat jars are made using wholesome ingredients and are super tasty. Perfect for making ahead of time, try making at the weekend for a grab-and-go weekday breakfast.

Method

  1. The first thing to do is to prepare the oats. Start by grating one carrot. Then, mix the rolled oats with the chia seeds, adding the milk, grated carrot, spices and raisins. Stir well. Set aside to soak for at least 10 minutes or, for best results, keep in the fridge overnight.
  2. To prepare the yogurt layer, mix the yogurt with the maple syrup and vanilla extract.
  3. To decorate your jar, you can stick heart-shaped carrot slices on the inside. Just make sure that you cut really thin slices and the jar is completely dry. If the carrot hearts are not sticking to the glass, you can use a bit of honey to help it.
  4. Layer the overnight oats with the yogurt and top with a few flowers, pecans and a pinch of cinnamon.

Ingredients

All to be sourced organic where possible

  • Oats:
  • 90g rolled oats
  • 14g chia seeds
  • 1 carrot, grated
  • 350ml milk of your choice
  • 1/2 tsp cinnamon
  • 1/8 tsp nutmeg
  • A handful of raisins
  • Yogurt:
  • 236ml Greek yogurt
  • 10ml maple syrup
  • 6ml vanilla extract
  • Decoration (optional):
  • A few edible flowers
  • A handful of pecans
  • A pinch of cinnamon
