Berry tartlets

These quick and easy tartlets are a great idea for a tasty breakfast.

Method

  1. Weigh and measure your ingredients. Combine the muesli and dates for about 5 minutes in a food processor until the mixture binds together when gently pressed by hand. This mixture forms the tartlet crust.
  2. Remove the tartlet crust mixture from the food processor and distribute evenly in 6 tartlet forms. Ideally the forms should have a loose and removable base, though this isn't strictly necessary.
  3. Press the mixture into the forms using your hand or the back of a spoon.
  4. Fill each tartlet with 2 tbsp of yoghurt and top with your favourite frozen or fresh berries.
  5. Enjoy!
  6. TIP: If a little bit of the crust mixture is left over, form into little energy balls and freeze for when you need an on-the-go-snack. Replace the berries with other seasonal fruit throughout the year, so as to keep this treat kind to the planet.

  • 200g muesli or granola of your choice
  • 150g medjool dates, pitted
  • 300g creamy vegan yoghurt
  • A handful of fresh or frozen berries of your choice
