Beetroot energy bites

Power your day with these beetroot and chocolate bites. A healthy snack or breakfast nibble, perfect for whenever you need a quick boost of energy.

Method

  1. Place ingredients in a blender and whizz to a smooth paste. You will find it easier to do this in stages, starting with the beetroot, dates, nuts and adding the other ingredients next.
  2. Once combined, place the paste in the fridge for 30 minutes so it hardens.
  3. When you are ready to make the energy balls, spread some shredded coconut on a plate. Take ½ tbsp of beetroot mixture and roll between your hands to make a small ball. Roll in shredded coconut, if desired.
  4. Repeat with the rest of the mixture.
  5. Store the energy balls in an airtight container in the fridge for up to 7 days.

  • 100g beetroot, cooked
  • 100g dates
  • 75g cashew nuts
  • 3 tbsp maple syrup
  • 1 tsp vanilla extract
  • 3 tbsp orange juice
  • 200g rolled oats
  • 30g cocoa powder
  • 50g shredded coconut for rolling (optional)
